Baking Tip #1 → Creaming Butter and Sugar

In order to make the best cookies regardless of the recipe, I am going to give you a tip that will change your life. Seriously, you will never bake cookies the same. Before I tell you the tip, I do have to clarify that this tip only works with a recipe that calls for softened butter to be creamed with sugar, NOT MELTED BUTTER.

Are you ready? My tip is what I call the 10-MINUTE MIXING Rule. This means that you must cream your butter and sugar for no less than 10 minutes on medium to high speed using a stand mixer (you can use a hand mixer if you want an excellent arm workout💪). Set a timer for 10 minutes and let the mixer do its thing! I like to scrape down the sides of the bowl every couple of minutes to make sure all of the sugar and butter are being well incorporated together.

You might be wondering,

“Will this tip actually make a difference in my cookies?”

The answer: Yes! A HUGE difference. Your cookies are going to be fluffier and have a uniform taste and texture. When you cream the butter and sugar together, you are actually whipping air into the mixture that creates a light and fluffy cookie during the baking process. These air pockets make the cookie melt in your mouth.

Also, since you mix the ingredients together for so long, you are certain to have a more uniform taste and texture throughout all of the cookies in your batch. You will NOT have any more of those weirdly greasy cookies that come from the chunks of butter that didn’t incorporate into the rest of the dough.
