Whether they are bought or made from scratch, donuts are one of the best desserts ever created. The pillowy dough combined with the sweet icing or glaze creates the most magical bite transporting you to donut heaven. I was always intimidated to make donuts from scratch. Yeast dough and deep frying, the main elements of donuts, can be difficult to control. Because of the difficulty and many possibilities for error, I gave up on the idea of making donuts from scratch. However, everything changed upon discovering a baked donut recipe from the Tasty website. After a quick trip to the store to buy the donut pan, I went into my kitchen and got to work.

These baked donuts are so easy and taste exactly like a deep fried donut. This specific baked donut recipe combines two of my favorite things in the world, donuts and cereal. I used a fruit cereal but you could use any cereal that you desire in order to customize the recipe to your liking.

Sophia’s Delicious Donuts

Ingredients:

Glaze:

  • 1 cup fruit flavored cereal
  • ¾ cup milk
  • 2 ¼ cups powdered sugar, sifted

Donuts:

  • 2 ½ cups all purpose flour
  • 1 cup fruit flavored cereal, finely crushed
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup milk
  • ½ teaspoon vanilla extract

Directions:

  1. Preheat the oven to 425°F. Grease the donut pan with nonstick spray.
  2. Using a blender, crush the fruit cereal until it forms fine crumbs.
  3. Make the donuts: In a medium bowl, combine the flour, crushed cereal, baking powder, baking soda, and salt. Stir to combine.
  4. In a large bowl, whisk together the sugar, vegetable oil, eggs, milk, and vanilla. Add the dry ingredients and whisk until there are no lumps.
  5. Transfer the batter to a piping bag or zip-top bag with a corner cut off. Pipe the batter into the prepared donut pan. Leave about ¼ inch (6 ml) from the rim, so they don’t overflow.
  6. Bake for 9–10 minutes, until the donuts are just beginning to turn golden brown around the edges and a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to continue cooling for about 20 minutes.
  7. In a small bowl, combine the cereal and milk for the glaze. Set aside to soak for 20 minutes. Strain into a clean bowl, pressing on the cereal to extract as much milk as possible.
  8. Make the glaze: In a medium bowl, combine the powdered sugar and ¼ cup of the cereal milk. Whisk until smooth.
  9. Add the cereal for topping to a shallow dish.
  10. Once cooled, dip the tops of the donuts into the glaze, then into the cereal. Set on a wire rack set over a baking pan to dry for at least 20 minutes, until the glaze is no longer shiny.
  11. Enjoy!

Pour your fruit cereal into the blender.
Stop blending once the cereal is finely crushed. This is what it should look like.
Sift together the flour, baking powder, baking soda, salt, and crushed cereal.
Whisk to fully combine the ingredients. Set aside.
In a large bowl pour your granulated white sugar.
Add vegetable oil.
Add milk.
Add vanilla extract.
In a small bowl or container, crack two large eggs.
Add the eggs to the rest of the wet ingredients.
Whisk until fully combined.
Once fully mixed, the wet ingredients should look like this.
Begin adding the dry ingredients in small batches, mixing after each batch.
The batter should look like this once fully combined.
Grease your donut pan with nonstick spray.
Using a piping bag or spoon, add your batter into the donut pan. Place the donut pan into a preheated oven set to 425°F. Bake for 9–10 minutes.
Once fully baked, the donuts should look like this.
Let the donuts cool completely before glazing them.
For the glaze, let the fruit cereal and milk soak for 20 minutes. Then strain the cereal and add the powdered sugar.
Dip the donuts in the glaze and top with more crushed fruit cereal.
