Sophia’s Easy, Delicious, Thumbprint Cookies
I am about to give you the easiest, quickest, yummiest, jelli-est, cookie recipe ever. These cookies will blow you away with their soft and airy dough paired with the fruity goodness of the jelly of your choosing. If that description hasn’t persuaded you to get out of bed and make these cookies immediately then this fact will. This recipe has only SIX INGREDIENTS! Yes, only six, and you probably have them sitting in your fridge and pantry. Easy to bake and delicious, what more could you ask for in a cookie? I must warn you, these are addicting so bake at your own risk.
Sophia’s Easy, Delicious, Thumbprint Cookies
Ingredients:
- 1 ½ cup all-purpose flour
- 2 large eggs
- 1 container of jelly (any flavor of your choosing)
- ½ teaspoon vanilla extract
- ½ granulated white sugar
- 1 ½ sticks unsalted butter (softened)
Directions:
- Preheat oven to 375°F. Line a large baking sheet with parchment paper. Set aside.
- In a medium bowl attached to a stand mixer, beat the softened butter.
- Add the sugar to the butter and beat until fully combined and fluffy. Beat for about 5 minutes on medium speed.
- Add the eggs and vanilla and beat on medium speed until fully combined.
- Slowly add the flour to the rest of the ingredients and mix at low speed.
- Using a small cookie scoop, scoop the cookie dough onto the baking sheet and indent with a CLEAN thumb or small spoon.
- Fill the thumb indents with about a ½ tablespoon of jelly.
- Bake for 15–20 and let cool on a baking rack completely.
