Sophia’s Easy, Delicious, Thumbprint Cookies

I am about to give you the easiest, quickest, yummiest, jelli-est, cookie recipe ever. These cookies will blow you away with their soft and airy dough paired with the fruity goodness of the jelly of your choosing. If that description hasn’t persuaded you to get out of bed and make these cookies immediately then this fact will. This recipe has only SIX INGREDIENTS! Yes, only six, and you probably have them sitting in your fridge and pantry. Easy to bake and delicious, what more could you ask for in a cookie? I must warn you, these are addicting so bake at your own risk.

Sophia’s Easy, Delicious, Thumbprint Cookies

Ingredients:

  • 1 ½ cup all-purpose flour
  • 2 large eggs
  • 1 container of jelly (any flavor of your choosing)
  • ½ teaspoon vanilla extract
  • ½ granulated white sugar
  • 1 ½ sticks unsalted butter (softened)

Directions:

  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper. Set aside.
  2. In a medium bowl attached to a stand mixer, beat the softened butter.
  3. Add the sugar to the butter and beat until fully combined and fluffy. Beat for about 5 minutes on medium speed.
  4. Add the eggs and vanilla and beat on medium speed until fully combined.
  5. Slowly add the flour to the rest of the ingredients and mix at low speed.
  6. Using a small cookie scoop, scoop the cookie dough onto the baking sheet and indent with a CLEAN thumb or small spoon.
  7. Fill the thumb indents with about a ½ tablespoon of jelly.
  8. Bake for 15–20 and let cool on a baking rack completely.
  9. Enjoy!
These are the brands of ingredients I use. Feel free to use any brands that you like. :)
The measured out ingredients. I do this because it saves time during the baking process. Totally optional but highly recommended.
Cream the softened butter at medium speed.
Add the sugar to the softened butter mixture.
Beat on medium speed until fluffy.
Once creamed and fluffy, the butter and sugar mixture should look like this.
Add your eggs, one at a time, to the sugar and butter mixture. Beat on medium speed until fully combined.
Once the eggs are fully combined, add the vanilla extract.
Slowly add the flour to the rest of the ingredients.
Beat on low speed until fully combined.
Once fully combined the dough should look like this.
Line a baking sheet with parchment paper.
Scoop your dough with a small cookie scoop.
Indent the middle of the dough with a CLEAN thumb or small spoon.
Place about 1/2 tablespoon of jelly into the thumbprint of the cookie.
The cookies should look like this before baking.
In a preheated oven @ 375°F, bake for 15–20 minutes. The cooking time will vary depending on your oven.
Remove the cookies when they are slightly golden on the top and the dough appears fully cooked. Let cool on a baking rack.
