Sophia’s Easy Peasy Meringue Cookies

Have you been looking for a quick, delicious, from-scratch cookie with less than 5 ingredients? Well, I have the perfect cookie for you! These Easy Peasy Meringue Cookies are so yummy and are the perfect dessert when you are craving something light and sweet.

As if these cookies weren’t great enough, you can also customize them to make them as colorful and flavorful as you wish. I wanted to make mine pink and keep the flavor vanilla but you could change the food coloring and extract to any of your likings.

The recipe I use is from the Food Network and it is absolutely perfect. I will show you step by step how easy they are to make.

Sophia’s Easy Peasy Meringue Cookies

Ingredients:

  • 3 large eggs whites
  • ⅛ teaspoon cream of tartar
  • ½ teaspoon pure vanilla extract
  • ¾ cup granulated white sugar

Directions:

  1. Preheat the oven to 200°F.
  2. Line 2 baking sheets with parchment paper or a reusable silicone mat.
  3. Separate your egg whites and yolks.
  4. In a stand or hand mixer fitted with a whisk attachment, add the egg whites, vanilla extract, and cream of tartar.
  5. Beat until the mixture is frothy and soft peaks form.
  6. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition.
  7. Once all of the sugar has been added, add your food coloring to dye the meringue.
  8. Beat for an additional 5 minutes or until the meringue is shiny and forms stiff peaks.
  9. Place the mixture into a piping bag or zip lock bag. It does not matter if you pipe these with or without a piping tip.
  10. Pipe 2-inch cookies onto the lined baking sheets.
  11. Bake for 45 minutes, then turn off the oven and leave the cookies in the oven for an additional 30 minutes. Do NOT open the oven door before the 30 minutes are finished.
  12. After 30 minutes, remove from the oven and let cool completely before storing them in an airtight container.
  13. Enjoy!

These are the brands of ingredients I use.
First, using clean hands, separate your egg yolks from the egg whites. There are many ways to do this but I find cracking the egg into your hand and letting the whites fall through the space between your fingers is the quickest and easiest way.
Pour your 3 egg whites into the bowl of a stand mixer. You could also use a hand mixer but it will require a bit of an arm workout!
Add your vanilla extract.
Add the cream of tartar. Cream of tartar helps to stabilize egg whites when they are being whipped and it also prevents sugar from crystallizing.
Whip the egg whites and other ingredients on medium speed.
Once the egg whites look like this, stop whipping them.
Add your granulated white sugar into the egg whites one tablespoon at a time, whipping for 15 seconds in between each addition of sugar.
This step is completely optional, but once all of the granulated white sugar is added to the egg whites, add your food coloring of choice. I made mine pink but you could make your cookies any color you like!
Mix your batter until the color is fully combined and it looks glossy and shiney.

Transfer to a piping bag with or without a tip. If you do not have a piping bag, a zip lock bag will work perfectly instead.
Pipe your cookies onto a prepared baking sheet.
Bake the cookies in a preheated oven at 200°F for 45 minutes.
After 45 minutes, turn off your oven and leave the cookies in the oven for an additional 30 minutes.
Once the cookies are done, they should peel easily off the bottom of the baking sheet like in this photo.
