Sophia’s Nutella S’mores Cookie Bars

During the summertime, one of my favorite things to enjoy is a s’more. I love standing around a campfire and toasting my marshmallow so it is perfectly golden brown. Then, taking the toasted marshmallow and placing it in between two honey graham crackers with a piece of chocolate in the middle and biting into the gooey perfection. The treat takes your taste buds into a magical place of food paradise that leaves you begging for s’more!

I knew I had to take these classic, delicious s’mores flavors and create a dessert bar of my own. However, I didn't want this to be just an ordinary s’mores cookie bar. I wanted this bar to be the ultimate s’mores bar which is why I decided to incorporate one of my favorite chocolate spreads, NUTELLA!

Sophia’s Nutella S’mores Cookie Bars

Ingredients:

  • ½ cup unsalted butter, 1 stick (Melted)
  • ¼ cups granulated white sugar
  • ¾ cups light brown sugar
  • ½ teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup honey Teddy Grahams
  • 1 ¼ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ cup Nutella
  • 1 cup cinnamon sugar
  • 16 jumbo marshmallows
  • nonstick cooking spray or parchment paper

Directions:

  1. Preheat oven to 350°F
  2. In a large bowl, combine melted butter, salt, granulated white sugar, and light brown sugar. Mix until a paste forms with no lumps.
  3. Mix in the egg and vanilla extract.
  4. Place Teddy Grahams into a Ziploc bag. Crush with a mallet until they resemble fine crumbs.
  5. Sift in the flour, baking soda, and crushed Teddy Grahams. Mix until fully combined
  6. Let the mixture chill in the refrigerator for 15 minutes.
  7. Split the dough into 2 portions.
  8. Grease a 9x9 inch pan with non-stick spray.
  9. Take half of the dough and press it into the pan so it covers the bottom of the pan completely.
  10. Spread the Nutella mixture evenly over the dough in the pan.
  11. Take the other half of the dough and place it over the Nutella mixture. Try to cover as much of the Nutella as possible.
  12. Bake in a preheated oven at 350°F for 15–20 minutes.
  13. Place the 16 jumbo marshmallows onto the uncut bar so there are 16 pieces with 1 marshmallow each when the bars will be cut.
  14. Broil until golden brown.
  15. Let cool completely. Enjoy!

These are the brands of ingredients I use. Feel free to use any brand you like.
These are the measured ingredients. I recommend that you measure out your ingredients ahead of time so you save time once you begin the baking process.
Place your unsalted butter into a microwave-safe bowl and microwave until fully melted.
Pour your granulated white sugar into the melted butter.
Add your light brown sugar.
Add your salt.
Mix well.
Add your egg.
Add your vanilla extract.
Mix well until the mixture looks well combined and smooth.
Place your Teddy Grahams into a Ziploc bag.
Crush the teddy Grahams with a mallet until they resemble fine crumbs. You could also use a food processor to crush the Teddy Grahams.
Sift in the all-purpose flour.
Sift in the baking soda.
Sift in the crushed Teddy Grahams.
Fold the dry ingredients into the wet ingredients until they are fully combined.
The dough should look like this when it is fully combined. Let the dough chill in the refrigerator for 15 minutes.
Grease a 9x9 inch rectangular cake pan with non-stick spray.
Remove the dough from your refrigerator. Split the dough in half.
Press half of the dough into the bottom of the pan.
Spread your Nutella evenly onto the dough.
Take the remaining half of your dough and place it over the Nutella. Try to cover the Nutella as much as you can but if there are little cracks of Nutella, that is completely okay.
Bake in a preheated oven at 350°F for 15–20 minutes. Mine takes 17 minutes to bake but oven times may vary.
Remove from the oven when the top layer of dough is golden brown.
Place your 16 marshmallows on top of the bar so they create 16 even pieces when they will be cut. Broil the marshmallows until they are golden on the top.
Let the bar cool and cut it into 16 pieces. Serve and enjoy!
