Sophia’s Signature “Cinna-Fun” Cake

I believe that out of any cinnamon flavored dessert I have ever baked, this one takes the cake! ;) Puns aside, if you are as obsessed with cinnamon flavored desserts as I am, you must bake this cake ASAP. It is a cinnamon flavored cake layered with cinnamon buttercream frosting and cinnamon toast crunch. Not to mention it is topped with cinnamon rolls. I mean, need I write more? Be careful baking this cake because once your friends and family taste it, they will beg you to bake it for every ocasion.

Sophia’s Signature “Cinna-Fun” Cake

Ingredients for Cake Batter:

  • 1 cup unsalted butter
  • 1 ¼ cups sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 ¼ cups flour
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking powder
  • 1 ½ cups milk

Ingredients for Cake Topping:

  • ½ cup unsalted butter (1 stick), melted
  • 3 tablespoons cinnamon sugar
  • 4 tablespoons light brown sugar

Ingredients for Cinnamon Buttercream Frosting:

  • 1 ½ cups unsalted butter (3 sticks)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 4 cups powdered sugar
  • ¼ cup Cinnamon Toast Crunch cereal soaked milk

Directions for Cake:

  1. In a large bowl, beat butter and sugar on high speed until light and fluffy. This should take around10 minutes.
  2. Add eggs, one at a time, beating throughly after each addition.
  3. Add the vanilla extract and mix until combined.
  4. In another large bowl, whisk together flour, ground cinnamon, baking powder, and salt.
  5. With the mixer on low speed, alternate adding the dry ingredients with the milk in small amounts. Mix until the batter is fully combined.
  6. Pour the cake batter evenly into two 9-inch greased pans.
  7. For the cake topping, melt 1 stick of unsalted butter in a small microwave safe bowl. Add the ground cinnamon and brown sugar and mix until fully combined.
  8. Pour the half of the cake topping onto each of the cakes.
  9. Bake for 20–25 minutes in a preheated 350°F oven.
  10. Let cakes cool completely.

Directions for Cinnamon Buttercream Frosting:

  1. In a large bowl, beat the butter until light and fluffy.
  2. With the mixer on low speed, add powdered sugar in small amounts and mix until fully combined.
  3. Add vanilla extract, ground cinnamon, salt, and Cinnamon Toast Crunch soaked milk. To make the milk, pour your cereal into a bowl with the milk and let sit for 15–20 minute. Then, strain the milk from the cereal.
  4. Whip the frosting on high speed for 10 minutes to get really fluffy and delicious frosting.

How to make the cakes:

Cream the butter and sugar until light and fluffy.
Add the eggs and vanilla extract.
Make the cake topping!
Pour half on the cake topping onto each of the cakes.
Swirl the cake topping!
Bake for 20–25 minutes!

How to make the frosting:

Add the powdered sugar in small batches on low speed.
Add the salt, vanilla extract, and ground cinnamon.
Soak Cinnamon Toast Crunch cereal in your milk. Add the milk to the frosting and whip on high speed for 10 minutes.

How to assemble the cake:

Start by placing four sheets of parchment paper around a circular dish to decorate your cakes. You can remove the sheets once you finish decorating and they help to keep your cake dish neat and clean.
Place your first sheet of cake onto the parchment paper. Scoop a generous amount of frosting onto the first layer of cake.
Add crushed Cinnamon Toast Crunch cereal onto the layer of frosting and spread the frosting so it evenly covers the top of the first layer of cake.
Place your second layer of cake on top of the first layer with the frosting. Place the second layer with the bottom side facing upwards. This will ensure that the cake has a flat top.
Spread the rest of your frosting around the cake with an offset spatula until it evenly covers the entire cake.
Bake store bought cinnamon rolls to top your cake.
Add the cinnamon rolls on top of your cake.
Add more Cinnamon Toast Crunch cereal to the sides of your cake and let your cake chill in the fridge until it is ready to be served.
Remove the parchment paper and you’re done!
