Sophia’s Signature “Cinna-Fun” Cake
I believe that out of any cinnamon flavored dessert I have ever baked, this one takes the cake! ;) Puns aside, if you are as obsessed with cinnamon flavored desserts as I am, you must bake this cake ASAP. It is a cinnamon flavored cake layered with cinnamon buttercream frosting and cinnamon toast crunch. Not to mention it is topped with cinnamon rolls. I mean, need I write more? Be careful baking this cake because once your friends and family taste it, they will beg you to bake it for every ocasion.
Sophia’s Signature “Cinna-Fun” Cake
Ingredients for Cake Batter:
- 1 cup unsalted butter
- 1 ¼ cups sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 3 ¼ cups flour
- ½ teaspoon salt
- 1 tablespoon ground cinnamon
- 1 tablespoon baking powder
- 1 ½ cups milk
Ingredients for Cake Topping:
- ½ cup unsalted butter (1 stick), melted
- 3 tablespoons cinnamon sugar
- 4 tablespoons light brown sugar
Ingredients for Cinnamon Buttercream Frosting:
- 1 ½ cups unsalted butter (3 sticks)
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 4 cups powdered sugar
- ¼ cup Cinnamon Toast Crunch cereal soaked milk
Directions for Cake:
- In a large bowl, beat butter and sugar on high speed until light and fluffy. This should take around10 minutes.
- Add eggs, one at a time, beating throughly after each addition.
- Add the vanilla extract and mix until combined.
- In another large bowl, whisk together flour, ground cinnamon, baking powder, and salt.
- With the mixer on low speed, alternate adding the dry ingredients with the milk in small amounts. Mix until the batter is fully combined.
- Pour the cake batter evenly into two 9-inch greased pans.
- For the cake topping, melt 1 stick of unsalted butter in a small microwave safe bowl. Add the ground cinnamon and brown sugar and mix until fully combined.
- Pour the half of the cake topping onto each of the cakes.
- Bake for 20–25 minutes in a preheated 350°F oven.
- Let cakes cool completely.
Directions for Cinnamon Buttercream Frosting:
- In a large bowl, beat the butter until light and fluffy.
- With the mixer on low speed, add powdered sugar in small amounts and mix until fully combined.
- Add vanilla extract, ground cinnamon, salt, and Cinnamon Toast Crunch soaked milk. To make the milk, pour your cereal into a bowl with the milk and let sit for 15–20 minute. Then, strain the milk from the cereal.
- Whip the frosting on high speed for 10 minutes to get really fluffy and delicious frosting.
