Sophia’s Totally Delicious Corn Muffins

Last night, I made the most delicious corn muffins for my family and they were so delicious I had to post about them. While some people say corn muffins should be eaten for breakfast and others argue for dinner, I think they should be enjoyed for BOTH meals because they are just that good. My recipe is quick, easy, and the corn muffins are perfectly sweet. I found my recipe here, using this link.

Sophia’s Totally Delicious Corn Muffins

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ⅓ cup white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg, beaten
  • ¼ cup canola oil
  • 1 cup milk

Directions:

  1. Preheat your oven to 400°F.
  2. In a large bowl, add the cornmeal, flour, sugar, baking powder, and salt and whisk until they are fully combined.
  3. Pour the egg, milk, and canola oil into the rest of the ingredients and mix until the batter is smooth.
  4. Grease your muffin pan with non-stick spray or butter.
  5. Spoon/pour your batter into the greased muffin pan.
  6. Bake for 20–25 minutes, depending on how big your muffin tins are.
  7. Insert a toothpick to see if the corn muffins are done. If the toothpick is clean and dry, the corn muffins are baked all the way through.
  8. Serve warm and enjoy!

These are the brands of ingredients I use. Feel free to use any brands that you like/have.
Grease your muffin pan with non-stick spray or butter. I use a large muffin tin because I think bigger muffins are better.
Measure out your ingredients ahead of time before you start so you save time once you begin mixing ingredients. This step is optional but I find I am more organized when I complete this step.
Beat your egg with a fork or whisk in a small bowl.
In a large bowl, add your cornmeal. I am using white cornmeal because that is what I have in my house. Yellow or white cornmeal is fine for this recipe.
Add your all-purpose flour.
Add your sugar.
Add your salt.
Add your baking powder.
Whisk to combine dry ingredients.
Pour in your milk.
Pour in your beaten egg.
Pour in your canola oil.
Mix all the ingredients together until they are fully combined.
This is what the batter should look like when it is mixed completely.
Pour your batter into your greased muffin tin. Make sure to fill each muffin tin halfway full. I had enough batter for 5 large muffins.
Place your muffins into your preheated oven and bake for 20–25 minutes, or until a toothpick comes out clean.
They are done!
