Sophia’s Very BEST Vegan Chocolate Chip Cookies

There is nothing tastier than a warm choclate chip cookie served fresh out of the oven. The way the cookie falls apart as you go to take a bite, with chocolate chunks melting all over your fingers. Wow, I need a cookie now!

You probably have your own traditional chocolate chip cookie recipe. A perfect combination of butter, sugar, eggs, flour, and secret ingredients that make your recipe unique. Obviously, I have my own chocolate chip cookie recipe that you must bake and read about right here (I promise it’s delicious). However, I am always open to trying other recipes and altering my own. This is what led me to try a vegan chocolate chip cookie recipe. I wanted to know if this Vegan recipe would be a competitor for my standard cookie recipe. Let me tell you, it is.

Not only should you try this plant-based Vegan recipe because it is DELICIOUS, but also because it’s good for the planet. Eating plant-based diets and cutting back on meat and dairy products are a great way to reduce your own carbon footprint and benefit the health of the planet. My recipe is based on a recipe that can be found here. I have made changes to the recipe so that it is fully my own. This recipe makes about 12 cookies.

Sophia’s Very Best Vegan Chocolate Chip Cookies

Ingredients:

  • ½ cup sugar
  • ¾ cup light brown sugar, packed
  • ½ teaspoon salt
  • ½ cup coconut oil, melted
  • ¼ cup oat milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ½ teaspoon baking soda
  • 1 cup semi-sweet chocolate, chunks

Directions:

  1. In a large bowl, whisk together the sugar, brown sugar, and coconut oil until combined.
  2. Whisk in oat milk, vanilla extract, and salt until all sugar has dissolved.
  3. In a medium size bowl, whisk together flour, baking soda, and ground cinnamon.
  4. Fold in the flour mixture with the wet ingredients and mix until fully combined.
  5. Fold in the chocolate chunks evenly.
  6. Chill the dough for at least 30 minutes.
  7. Preheat oven to 350°F (180°C).
  8. Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet.
  9. Bake for 12–15 minutes.
  10. Enjoy!

The photos below will show you how I make the cookies.

Add melted coconut oil into a large bowl.
Add brown sugar.
Add white sugar.
Mix until the sugars and coconut oil look like wet sand.
Add vanilla extract and salt.
Add oat milk.
Mix until the sugars fully dissolve and your batter looks like this.
In a medium bowl, add flour.
Add baking soda.
Add ground cinnamon.
Whisk until fully combined.
Add the flour in small batches to the rest of the ingredients.
Keep mixing!
Once fully mixed, the dough should look like this.
Fold in the chocolate chunks.
Chill your fully combined dough for at least 30 minutes.
Using an ice cream scoop, scoop your cookie dough onto a lined baking sheet. Bake for 12–15 minutes in a preheated oven set to 350°F, rotating the baking sheet halfway through.
They should be golden brown and the chocolate should be melted when they are done.
